Bikini Recipe

Yields 10 servings

Ingredients for the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Drink (yields 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

Making the Syrup: Place all the items inside a saucepan, heat until it reaches a simmer, agitating until the sugar dissolves. Next, take off the stove allowing it to cool down entirely. Decant into an sealable bottle, seal and store in the refrigerator, it can be stored for around a month.

To make Cocktail Base: Combine every liquids in a sizeable container, let it rest for an hour, then filter it best through a fine cloth, so it's perfectly clear.

For serving: Measure 85ml from the premix into your stirring glass packed with ice, and stir carefully for a minute to chill. Pour into a chilled martini glass or equivalent, garnish with a few cranberries and complete it with a brief mist of mandarin oil above the glass.
